Appearance: A beautiful, intense gold color tending towards old gold, with fine, elegant
bubbles and a delicate mousse.
Nose: it immediately reveals a great complexity, reminiscent of old Blanc de Blancs,
with an incredible spectrum of caramelized nut, candied fruit, dried spice, mocha and
dried apricot aromas, followed by toasted bread, vanilla, brioche and tarte tatin notes,
with a hint of aniseed on the finish. A very pastry-like ensemble.
Palate: after a fresh attack, the mouth is spherical, then gives way to a creamy texture
with flavors of mirabelle plum and marmalade, after evolving towards notes of honeyed
dried fruit and brioche. The persistent, intense finish is fresh, creamy and toasty,
creating a tasting experience of great complexity and uniqueness.
