French-born biochemist Sophie Decobecq makes Calle 23 in the highlands of Jalisco. Her philosophy is to make great tequila at an affordable price. In an industry first, Sophie distils each expression separately to its own special recipe using different combinations of yeasts in the fermentation.

The name Calle 23 comes from a street sign Sophie saw when celebrating the first batch of her tequila with friends. Calle (pronounced kay-yeh) 23 means 23rd Street.
