Sebastien Riffault is another loose cannon in the Loire, going against the trend of flavourless, adjusted wines from many of his colleagues in Sancerre. He adds nothing in the production of intense Pinot, starting with horse ploughed vines, often picked very late and with some botrytis. This is young-vine Pinot Noir, very pale in colour, sappy and stemmy with savoury characteristics that make it an ideal food wine.
