Completely out of left field, this locally made tonic uses raw cinchona bark - sourced from a sustainable farm in Guatemala - to create an earthy, rich bitterness that is simply unique. Further complexed by orange peel, rosemary and a pinch of fleur de sel, this takes tonic in an altogether new, more savoury direction.
