Pierde Almas subject a Mezcal Espadn to a third distillation, over low flame. Rabbit carcasses are hung inside the bell, where the steam from the heated Mezcal collects before passing into the condensation tube. Besides the notes of orchard fruit and minty tarragon, there is a subtle savoury presence dwelling deep in the background.
