A bar spoon is an extra long spoon that has many functions behind the bar. Not only can you use it to mix, stir, crush, layer and muddle but you can also use it to help pour champagne without the bubbles spilling over the glass. Hold the spoon on the scoop end and place the other end of the spoon in the flute, pour the champagne down the twist of the spoon into the glass . This will dramatically reduce the amount of bubbles produced when pouring.
