Chardonnay used to be the most popular white variety in the country, but fell out of favour in the 90s when white wine lovers tired of the heavily oaked, buttery style. Since then, a revival has occurred thanks to wines that utillise less malolactic fermentation and accentuate the fruit flavours, like these two offerings from the Yarra Valley and the Margaret River. Yering Station''s Yarra Chardonnay has citrus and subtle cashew with linear acidity and wonderful length and precision. The Franklin Take Alexanders Vineyard Chardonnay is a brilliant example of premium Margaret River Chardonnay, with rich and complex buttered notes blended with a citrus precision that permeates the entire palate.
