Selectiv’-harvested, whole berries open-fermented in shallow vats, initially wild fermented, then overseeded with an aromatic cultured yeast, matured in used hogsheads for 4 months. A great success for a bold exercise, the wine complex but fresh, with no obvious tannins. The bright straw-green colour is another plus
