Originally established in 1862 by winemaking pioneer Hubert de Castella, St Huberts has played a long and distinguished role in developing the Yarra Valley's reputation for producing premium cool-climate Australian wines. For our Cabernet Merlot, fruit parcels are sourced primarily from vineyard sites on the warmer Yarra Valley flats, with a portion of the Merlot from the Upper Yarra.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.

Juicy, plummy red with good up front intensity and secondary characters emerging. Plums, boysenberries, earthy tannin, cedary notes, a lick of liquorice. The structure of prime Yarra Cabernet gently supported by the plushness of plump ripe Merlot results in a cohesive red that rolls deliciously across the palate.
