Each batch is kept separately in stainless steel fermenters and managed by a variety of techniques, including pumping over and drain and return to enhance colour, flavour and tannin extraction from the skins.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

The average age of the vines is 88 years, and are both Barossa Valley and Eden Valley; standard static fermentation approach with pumpovers, but varied for each parcel, matured in a mix of new and used French oak. The colour is perfect, the medium-bodied palate exquisitely balanced and proportioned, red and black fruits both on parade; it has an almost airy grace to the way it moves along the palate to a lingering finish.
