Block 9 Shiraz was handpicked then de-stemmed or crushed into 8 tonne open fermenters and inoculated. The ferments were pumped over with aeration three times a day,temperature was held around 25°C. The wine was then pressed to new and used French Oak barrels for its Malolactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 18 months barrel maturation and further aged in bottle before release.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Non-aggressive complexity. You can take from this as much as you wish. Cherry-plum fruit, briary aspects, chicory and cloves and small goods. Silty tannin is a key and seductive feature, as is well-integrated smoky/coffeed/creamy oak. Supple, elegant and with just enough power.
