The gorgeous, golden dessert wines many of us know and love owe their origins to the beautiful wines of Sauternes and Barsac in Bordeaux. Traditionally Semillon and Sauvignon Blanc, the grapes are allowed to fully ripen and become affected by the benevolent mildew known as Botrytis or 'noble rot'. This drains the fruit of moisture, thus concentrating the sugars. The wines show mixed peel, apricot and marmalade and invariably finish clean and fresh, despite the terrific sweetness.
