Dry, Full Bodied style of Cabernet SauvignonEden Valley, AustraliaA premium predominantly Caberent Sauvignon blend named and produced as a tribute to one of Australia's outstanding winemakers and pioneers, Cyril Henschke. The 1999 is made up of 70% Cabernet Sauvignon, 15% Merlot and 15% Cabernet Franc fruit all grown from Eden Valley and matured for 2 years in new French Oak. The drought conditions of the 1999 resulted in smaller berry size producing spicy, dark intense reds, shown through the compact palate of sweet fruit, mocha and pepper, structured by fine grained tannins and long, elegant finish.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Structured, superfine, proportioned cabernet of complexity, richness and intensity. Tight and blackcurranty with toasty, funnelled, focussed fruit and length. Excellent mix of savoury French oak and ripe red fruit. Beauty.

Medium to full red-purple; the bouquet is flooded with clean, fragrant blackcurrant and cassis fruit; quite lush fruit marks the entry through to the mid palate, then becomes much finer and more elegant towards the finish. A significant success for the vintage.
