Flint, steel, citrus and nectarine flavours gradually work toward white peach, chalk and cedarwood. It’s both inherently complex and inherently reserved. Whole-bunch pressed to French oak barriques, puncheons and foudre (all 10% new) and one ceramic egg for fermentation. Limited mlf (10%) with 10 months on lees in oak before bottling. Lemon and stone fruit aromas and a gentle waft of vanilla bean lead onto a savoury, linear and structured palate. Another six months or so in bottle (for the palate to fill out) is all it needs.
