The fruit was picked over several small picks then de-stemmed/crushed, chilled into mostly open fermenters. Initial cold soak and then inoculated. The fermenters were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then pressed to French barriques for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 15 months maturation.

Medium bodied red wines have a lightly textured mouthfeel with moderate flavour impact. Often medium in colour.
Dry wines have no trace of sweetness at all.

Cool-climate cabernet of great purity. Blackcurrant, graphite and tobacco all speak of the variety, and the cedary oak fits perfectly into the mix. Medium-bodied and elegant in style, the tannin is fine-grained and unobtrusive.
