Hand-picked, whole bunch pressed, cool fermentation. As far as pinot gris goes, this is light on the aromatics and spice usually associated with the variety. What it does have is a charming delicacy, magnifying the grapes granny smith apple, Packham pear and citrus qualities, and a gentle savouriness. With texture and linear acidity, it packs a lot into a small package.

This is the way Pinot Gris should be! Gorgeous aromas of spiced apple and ripe pear, and a palate rich and silky in texture with enough crisp acidity to keep it fresh and lively.
