Dry, Full Bodied style of ShirazFruit was destemmed, chilled and transferred to closed fermenters for cold soaking with daily pumpover. After 5 days the must was allowed to warm and fermented over a ten day period with pumpovers twice daily. Some parcels were pressed early to retain vibrant fruit characters with other components being allowed a small degree of extended maceration on skins before pressing, allowing tannins to soften.
