The palate is elegant, fresh and smooth with spicy complex toffee and fish oil. A round and rich mid palate is made tight with clear fine spirit, and creamy intense malt notes stretch for a long, clean finish. Pair with dry coconut ice cream, dark chocolate ganache and baked apple or bitey cheddar with figs, dates and prunes.

Who knew that the rows of vines depicted in front of the gabled winery on the iconic Wynn's Coonawarra label, are, in fact, Pedro Ximinez? Now, after countless years, they've carefully aged some and offered it as a gloriously unctious, complex limited release. Our surprise at its very existence was only surpassed by our surprise at its supreme finesse and class. Rancio, nuts, caramel, dried fruit, toffee, fig, dried apricot...the list of descriptors is as long as your arm, as is its formidable length. A truly memorable fortified, and very, very limited. And it's from Coonawarra!
