The 2018 Merlot was then destemmed/crushed into static
fermenters where it was fermented using yeast selected to
express desirable varietal flavours and aromas. The
fermenters were pumped over twice a day. Temperature
was held between 24-26°C for a slow extraction of tannins
and increased development of fermentation complexity.
Maceration was not extended to prevent over extraction of
tannin. The wine was pressed and transferred for
malolactic fermentation on oak allowing a soft integration
of the grape and oak tannins. The wine was blended and
bottled after 10 months maturation.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

A flavour packed, solid core of dark fruit, cassis, tapenade and dark chocolate notes provides real presence in a West Oz red that's sure to please. The body is plush and generously propotioned whilst the colour is dark, rich and youthful. Entwined through all of this is a beguiling savoury, leafy, mint hint, which, although understated, contributes extra regional interest.
