Normally the domain of the big red producers of the Barossa Valley and McLaren Vale, Quarry Hill turn their hand to producing a Sparkling Shiraz of great density and concentration. Made using Méthode Traditionelle, this Sparkling Shiraz is bright, rich and the colour of redish purple in the glass. There is a nose of red fruit and plum pudding, which translates onto the palate with blackcurrant, mulberry and plum flavours. The length points to a wine of outstanding quality with pedigree and purity.

The base wine spent 15 months in barrel before it was tiraged, and then remained on lees for 4 years until it was disgorged. This is a particularly good sparkling shiraz, its spiced cherry fruitcake flavours with unusual elegance thanks in no small measure to the low dosage. It doesn't need further time in bottle, but this certainly wouldn't hurt.
