The cabernet and merlot were separately vinified with complex extended fermentation and maceration, the merlot with 25 days in total, cabernet 37. This is all about savoury bay leaf tapenade adornments to blackcurrant fruit and not plum. It's a style I expect, plum not my preferred style. It combines power with elegance, length with texture.
