The fruit was machine harvested then destemmed and crushed into static fermenters. Once fermentation was established the tanks were pumped over with aeration twice a day. Temperature was held between 24-26°C for a slow extraction of tannins and increased development of fermentation complexity. The wine was then pressed and transferred to new and old French Oak barrels for fermentation allowing a soft integration of the grape and oak tannins. The wine was fined, filtered and bottled after 10 months of barrel.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.

Ruby red. A riper nose - plum and prune, undergrowth, cedar and tobacco. Smells rich. The (high quality) oak is a serious player in this wine, appropriate for a richer, fuller, more powerful wine, though not smothering or domineering - more pleasure than pain. An absolutely alluring nose that gets fresher with ever second in the glass. Will age magnificently. A baby Jack Mann.
