The Shiraz grapes were hand-picked, destemmed and fermented in 5 tonne open fermenters with twice daily pump overs to achieve maximum extraction of colour, flavour and tannin from the grape skins. At the completion of fermentation, the skins were basket pressed with the pressings and free-run combined.
