Semi Dry, Medium Bodied style of Sparkling WineThe Cuvee is produced using Chardonnay grapes from the Central Rages in NSW. The juice was selected for its acid structure and was fermented using a neutral yeast. After fermentation a small amount of Semillon was added to give length to the palate. A sugar addition was made for balance before the base was carbonated and bottled.
