The Cuvee is produced using Chardonnay grapes from the Central Rages in NSW. The juice was selected for its acid structure and was fermented using a neutral yeast. After fermentation a small amount of Semillon was added to give length to the palate. A sugar addition was made for balance before the base was carbonated and bottled.
