Cuvee d' Elevage Chardonnay 2016

Gin-gin clone Chardonnay was hand-picked in the early hours of the morning to keep the fruit cool. The whole clusters are loaded directly into the press, after which only the purest juice is extracted and fermented at 12°C in French Oak barriques, 60% of which were new. After fermentation the wine was aged in barriques for 9 months with fortnightly battonage. The wine was then blended, lightly fined and filtered before bottling.
