Wills DomainCuvee d' Elevage Chardonnay 2018
About this product
Winemaking The fruit for this wine was sourced from a southern Margaret River. Hand picked in the early morning, and chilled overnight in cool room the grapes were then gently whole bunch pressed directly to barrel the following day.
Following a natural fermentation the wine was SO2’d to prevent malo – lactic, and stirred periodically to lift the lees from the bottom of the barrels.
Following 8 months on lees the wine was empty from barrels, fined, stabilized and bottled.
We set out to make a very fine elegant Chardonnay, thus the cool site, modest Baume at picking with older oak have all contributed to achieving this desired style.

Vintage 2018
96 points
This is gloriously styled and composed, showing nectarine, lemon, nougat, vanilla and roasted hazelnut aromas on the nose, followed by a concentrated palate that displays outstanding depth and weight, superbly framed by fine texture and perfectly pitched acidity. Multi-layered and exquisitely poised. At its best: 2020 to 2028.
