Dry, Full Bodied style of ShirazGrapes were picked during the early hours of the morning while it was cool to allow cold soaking to gently extract colour and skin tannins. The grapes were fermented in open fermenters to allow gentle pump-overs three times a day. Post alcoholic fermentation the wine was transferred to 30% new French and American oak barrels and 70% older French barrels for malo-lactic fermentation. The wine was left to mature for 18 months before bottling. The wine was fined and filtered before bottling.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Lilac, clove, five-spice and anise corral about a mid to fully loaded palate, framed by gentle oak and a medicinal, smoky savour. Lithe, long and strongly regional in a wild sort of way, this is a a very good shiraz.

Showing lovely ripe fruit aromas of blackberry and dark cherry together with elegant notes of vanilla, cedar, floral and game, the wine offers beautifully weighted palate that is supple and fleshy. It is brightly fruited and complex at the same time, backed by fine-grained tannins. Approachable and delightfully drinkable. At its best: now to 2025
