Hand-picked, chilled overnight, destemmed, 4 days cold soak, open-fermented, matured for 12 months in French oak (33% new). A perfumed, spicy bouquet leads into a palate with red cherry in all its forms: fresh, poached, sour, spiced. It's undeniably fruity, but still building texture on the palate.
