In the latter part of the 2023 growing season, Geoff took the helm at Paramoor Estate and continued Will Frazer’s tradition of making a premium Shiraz from Colbinabbin Estate on the Eastern slopes of the Mt Camel range, known for its deep rich Cambrian soil.This wine highlights the exceptional quality of fruit that imparts remarkable complexity and distinction to our wines. After undergoing wild yeast fermentation, this wine matures gracefully for 10 months in French Oak and would benefit from cellaring for five to ten years.
