Easily the best Pastafarian we have released so far. No disrespect to the previous iterations, but this is awesome. Once again, from the Polish Hill River vineyard, farmed by the Jaeschkes in bio-dynamic conversion. 520m above sea level on Red Clay Loam over Blue Slate as per the usual. All destemmed and fermented until dry on skins in stainless steel before maturation in used Slovenian Foudre and used French oak for 12 months. Brambley lifted blueberries, cranberries, and blood plums alongside a shot of fresh brewed espresso. If you have ever had Ona Coffee Roasters Raspberry Candy blend, this is basically that in vinous form an Australian reference. Nice little milk chocolate in there, too. Red licorice, lithe tannin, vibrant acidity. Just delicious. Wine of the 2025 vintage, maybe. A lighter vintage from us, so get amongst it early.
