Lime Blossom. Bosch Pear. Floral. Textured. These grapes were harvested in the early hours of the morning and pressed upon arrival at the winery. The lightly pressed juice was cold settled and racked with light solids for fermentation. Fermentation of the juice took place in both stainless steel and neutral barrels with regular stirring. The skin contact component representing approximately 15% of the blend was plunged twice daily and then basket pressed half way through fermentation at the ideal texture and tannin balance, which occurred after 12 days. A blend of 15pct Skin Contact and 85 pct Oak and Stainless Ferment was made shortly after ferment and then transferred to neutral barrels, amphora and concrete on light lees. Regular stirring took place throughout the maturation of 6 months in oak and concrete. Blended in September to prepare for bottling.
