Time flies, or Tim flies. This is the project of MW and rabble-rouser, pét-nat expert, English sparkling wine revivalist and honorary Australian Tim Wildman. It’s ten years since the release of his first Astro Bunny, a 600 bottle run. Now, he’s exported to sixteen countries, and doing well. Meanwhile, this iteration is a blend of arneis, nero d’Avola and fiano.
Guava juice! Wow. Could be switched out pretty easily. Strong scents and flavours of that, almost a nectar-like texture but with bright, persistent and prickly fizz. It’s a fruity number, lots of fun, clean and cool and fresh. You can see a legion of enthusiasts of fun fizz getting really stuck in. And in that, well done.
