Cabernet Shiraz 2021

Time will slowly, slowly sand the edges off this cabernet shiraz. But thanks to the cabernet those edges will never completely disappear. There’ll still be knees of graphite, elbows of peppercorn. Because a face is unmemorable without features. A tent without poles is a pretty useless tent. But as years pass - or minutes if you’ve opened it - you’ll see if structure or smoothness is the winner.
