About this product

Each variety of grapes chosen for this wine consists of 3 rows of vines, planted in a nursery at the Corsica Vine Research centre 25 years ago, from vine cuttings sourced from ancient vines across the island of Corsica, that were almost extinct. Each variety were picked by hand, according to fruit flavour, ripeness & acidity. The taken by tractor back to Domaine Vecchio to destem, crush then macerate overnight. Ferment started the next morning with each variety kept separate in small open fermenters. Matured in old French oak hogsheads, retaining fruit flavour as the key. These four varieties are then blended 12 months later to create a unique blend of rare Corsican varieties. A rich spicy wine by Ulithorne showing leather and red liquorice notes initially, opening up to wild rosemary and cherries after a couple of hours. Dusty tannins lead into a savoury, herbal back palate. Super dry and intriguing wine.
