2008 was a warm year and therefore the fruit was picked three weeks earlier than normal, in early February, before the heat-wave arrived in the Barossa. This ensured the fruit was ripe with mature tannins and lower sugars. In the winery the use of open top concrete fermenters, chilled ferments, hand pump-overs, cap submerging with oak header boards and gentle pressing brings out the best characteristics of the fruit for this Elderton Ashmead Cabernet Sauvignon.
