Finesse and elegance are Wignalls' main focus when crafting their old block, ultra low cropping, Premium Chardonnay. Fermented cool in new barrels and aged for ten months, with cultured yeast and wild yeast ferments’ incorporated at a ratio of 25% wild, their co wild fermented Chardonnay has eventuated in a unique style to complement lighter food styles. The complex ‘bouquet’ of this wine reveals a subtle minerality, blending in with fresh Lemon and Citrus aromatics followed by discreet chariness and sweetness of the best French oak.
