Berries are crushed (just-split) and sent to tank for ferment. Just split berries allow for quicker breakdown of grape skins and better tannin extraction. Fermented on skin for 12-18 days at 25°C (warm) and pumped over three times a day, then pressed to barrel.French (Centre of France, Troncais, Jupille and Allier forests), 40% new. Aged in barrel on almost no lees for 10 months. No Battonage.

Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

It is gloriously expressed on the nose showing creme de cassis, Black Doris plum, vanilla, cigar box, mixed spice and cocoa characters. The palate is equally gratifying with outstanding concentration and richness, while remaining perfectly balanced and firmly structured. The wine offers layers of delectable flavours and soothing texture, superbly framed by fine, chalky tannins. At its best: 2020 to 2032.
