Paul PillotBourgogne Blanc
About this product
Like the rouge, this is a blinder from Thierry Pillot and arguably the finest Bourgogne Blanc we have shipped from this producer. It comes from a very well situated, 0.6-hectare parcel on a northeast-facing hillside just south of Chassagne, where the vines are now 35 years old. The grapes were hand-picked, pressed, left to settle and then naturally fermented on lees for 12 months in small stainless steel vats and mostly older barrels (there is less than 10% of new oak overall).

Medium bodied white wines have a lightly textured mouthfeel with moderate flavour impact. Often pale lemon coloured to pale gold.
Dry wines have no trace of sweetness at all.
