Bernard Defaix's Petit Chablis is drawn exclusively from Kimmeridgian-based soils, unlike most Petit that generally comes from the low-lying sites on Portlandian limestone to the north of the commune. It's not necessarily the type of limestone but its location that makes the difference. This is a glass of crunchy, vibrant Chablis, with flinty mineral threads woven through notes of grapefruit, juicy, Cox's apple-like fruitiness and some quinine like minerality on the close. Still throwing off its youthful exuberance, what you get now is a tangy, racy, mouthful of freshness. Truly excellent Chardonnay for its level.
