Working with our vigneron friends at Provenance Wines, we carefully crafted the naturally fermenting Saignee and added it to the base beer to mature in barrel for 12 months. The 2021 Vintage (for release in Nov 2023) was the first to be aged in barrels for two years.
So whilst it’s not without its challenges, with challenge comes reward. part science. part artisanship. part luck.
