The grapes were put to press after harvest and pressed gently so as to minimise colour extraction and phenolics. The juice was then settled and racked off juice lees and inoculated with aromatic yeast. Fermentation was cool and took 2 weeks to complete. This was so as to accentuate fruit flavours. It was then left on yeast lees for 3 months to add complexity and mouth feel before being cleaned up, stabilised, and then bottled.
