With a bouquet of inviting lifted varietal notes of blackcurrant and cassis our 2017 Bittersweet Symphony Cabernet is an appealing, delicately balanced and finely structured wine. This is a classic example of high altitude, Clare Valley Cabernet Sauvignon showing generosity, medium weight and beautifully rich fruit characters. Cabernet is made for food – we’ve been drooling over the idea of braised beef short ribs flavoured with bay leaf and thyme with this one.
