Slieve Foy Irish Whiskey, a small batch bottling of 8 year old Single Malt, is from the award winning independent Cooley Distillery in Ireland. Slieve Foy is matured for over 8 years in American white oak casks (first used to produce bourbon whisky), producing a delicate floral and fruity whiskey with flavors of ripe banana, boiled sweets, vanilla, dark chocolate, coffee, spice and a lingering malt taste infused with oak wood. Slieve Foy is the highest peak of a ridge of mountains on the Cooley peninsula beside the distillery in Ireland the profile of which is said to resemble Irish legend Finn McCool.
