"Serré is French for tightly packed and refers to the close-planted block of pinot noir, planted in 1984 and certified organic. A mix of whole bunches, de-stemmed fruit and extended maceration, all with wild fermentation. Matured 12 months in French hogsheads, with mlf. Love the delicacy on display here, the slow creep of florals, red berries, leaf, sage and spice that work their way deep into the senses. And so smooth.
