Bouchard Nuits-Saint-Georges Les Cailles lies on the south side of the village of Nuits-Saint-Georges and is slightly different to other surrounding vineyards in that the wine is slightly more feminine in structure. Lifted perfume and soft, fine grained tannin are hallmarks. The vineyard is also unique for the soil on which is grows being of Oolite limestone. Where the ground is oolithic chalk, chalk composed of ooliths or little balls the size of fish eggs formed by the concretion of chalk on hard stones. A wine of superb structure that will age gracefully for more than decade.

Medium bodied red wines have a lightly textured mouthfeel with moderate flavour impact. Often medium in colour.
