Blewitt Springs, McLaren Vale, South Australia, hand-picked, basket pressed and open fermented, 10% whole bunch and hand plunged twice daily for maximum colour, flavor and tannin extraction. Racked into new French oak hogsheads (25%) and 1st and 2nd use French oak hogsheads for malolactic fermentation and maturation in the same oak for 20 months.



Full bodied, rich purple in colour, displaying mocha spice aromas with underlying blue fruits and spice; this carrys onto the palate with rich, well rounded dark fruits and black olive intensity. These flavors are held together with balanced oak tannins and acidity which provides palate persistance and length. Pair with chargrilled ribeye or game dishes such as Asian style roast duck or pork.
