Our cascading system of Spanish Pedro Ximenez and Oloroso casks that provide a luxurious finish to our Apera casks will ensure the consistency of this whisky for years to come. Layers upon layers of all the decadent notes that make a sherried whisky so wonderful. The nose delivers lashings of freshly made almond nougat mixed with juicy currants thanks to the time finishing in Oloroso casks. All while the richness of Pedro Ximenez sherry coats the palate with browned butter, toffee apple and a waxy walnut finish. Grilled summer peaches, a note we strive for in our new make spirit, rounds out this whisky with sweet complexity.
