Dry, Full Bodied style of Cabernet SauvignonCoonawarra, AustraliaFrom only the best vintages, certain parcels of fruit with exceptional character are released separately under this label. Fruit for this wine comes entirely from our ‘Abbey’ estate vineyard at the Parker Cellar Door, specifically the ‘95 Block’. The 95 Block sub-section of our vineyard is located west of the cellars and is planted with Reynell selection Cabernet Sauvignon. Harvested on the 17th of April, the fruit was then fermented in a 9T closed static fermenter for 10 days before undergoing extended skin contact for a further 30 days. Extended maceration helps to achieve optimal ageing potential and colour extraction. Malolactic fermentation was conducted in stainless steel before being barrelled down to 50percent new French oak Barriques and Hogsheads for 19 months maturation. The higher levels of new oak used in this wine assist with creating fine grained tannins and structure, thus enhancing cellaring potential. Cabernet Sauvignon 91percent Petit Verdot 9percent. Full bodied red wines have a noticeably textural mouthfeel with bold, complex flavours. Often deeply coloured.
Dry wines have no trace of sweetness at all.

Produced from a special block of Cabernet Sauvignon and Petit Verdot (9% this year), the 2020 wine packs a robust wallop. Aided by the Petit Verdot component, the wine shows remarkable power - dark, almost brooding, displaying deep black fruit, dark plums, cedar, tobacco, powdered herbs and a touch of choc-mint. The tannins, at this early stage, are on the chewy side. Enjoy it now, if you must (with a robust meal), or cellar for as long as you like.
