Tony Bish is at the forefront of high quality chardonnay in New Zealand's Hawke's Bay. Hand-picked grapes are whole bunch pressed, with only free run juice being added to concrete egg fermenters. Egg shaped fermenters keep yeast lees in suspension through the naturally occurring convection currents unique to the egg shape. The purity of fruit is maintained, richness and texture is built.
