Anna's Rosé

The parcel of Shiraz, clone PT23 was sourced from Martingale Vineyard in Gruyere on grey clay loam soils, the aspect of this block is north facing and the vines were planted in 2017. The harvest date was the 26th of February. Once in the cellar the fruit was gently pressed, the free run was transferred to tank and cold settled with the pressings kept separate . It was then cleanly racked to another stainless tank where it was inoculated with a rosé specific yeast for bright, fruit driven ester production in a cool slow fermentation environment. After primary fermentation was complete the wine was chilled, settled, racked off fermentation lees and sulphured.
